Cauliflower "Couscous"

Buy "riced" cauliflower or "riced" veggies ahead of time

Here we are using a savory version to mimic "rice" but the "rainbow" version includes colorful carrots & broccoli

Visit the anti-pasta bar at your local grocery store. Whole Foods sells an incredible "olive, feta, pink peppercorn and herb" anti-pasta.  But you can use any mixture you desire.

Chicken broth on hand

Ingredients

Riced cauliflower

or Riced Rainbow Veggies

Anti-pasta of feta, olives and pink peppercorns (optional)

Chicken broth

Any salad dressing will add a boost of flavor.  I love the new "healthy" version of either Kraft Italian or Wishbone. It's my secret sauce and guilty pleasure😁

Directions

Heat a large skillet on medium

You can use the oil from the anti-pasta or olive oil or chicken stock (if non stick skillet) to grease the pan

When hot add the riced cauliflower or riced veggies

Stir every few minutes until just tender

Turn off the heat

If using the anti-pasta scoop about 4 tablespoons into the riced mixture

If using for a base layer, let's say to put a fried egg on or veggie burger over then I use the "secret sauce"🤫

Plate and enjoy🥦
