Roasted peppers

Organic chopped kale

Well greased skillet

Cooking Time

4-6 minutes


1 serving double ingredients for 2


2 organic free range eggs

organic chopped kale

roasted peppers

olive oil spray or mister

fruit as desired, preferably in season


Heat well greased skillet on medium

Turn broiler on high

Scramble eggs

Pour evenly over skillet

Cook until set

Sprinkle with kale and peppers

Turn off burner

Transfer carefully to broiler

Watch until cooked through not browned

Turn off broiler

Use an oven mitt as pan handle is HOT!

Place on stove top

Carefully lift one section and fold over

Plate and garnish with seasonal fruit
