Egg & Avocado

Have my roasted peppers on hand. (see recipe)

Great use of left overs!

Any fresh herbs are a wonderful calorie free flavor enhancer.

Cooking Time

2-3 minutes

Ingredients

1/2 ripe organic avocado, chopped into cubes

2 organic free range eggs

Roasted peppers or fresh organic peppers washed & chopped 

Sea salt and pepper

Fresh chives or herbs of your choice

Directions

Heat well oiled skillet on medium

(if not using roasted peppers, toss some chopped peppers in hot skillet now to cook slightly 2 minutes and plate)

Scramble eggs in a bowl

Pour over hot skillet turn heat down

Slowly move eggs around the pan for about a minute (I use chop sticks!)

Once eggs are set and not runny I turn the heat off as the eggs will continue to cook

Plate eggs, avocado and peppers 

Season with sea salt, pepper and herbs as desired

Notes

Great high protein breakfast!

Eggs are a wonderful source of vitamins and the healthy fat from the avocado will keep you full until lunch.

It is also an incentive to use fresh herbs (see my store page for a portable herb garden) or a small potted plant on your window sill.

It is a fresh way to awaken your senses and mindful moment while you cook or savor your meal🙏
