Lemon Orzo Soup

Prep Notes

Have organic chicken breasts washed and diced

Organic spinach or kale rinsed and ready or pre-washed

Lemon zest prepared

Lemon juiced squeezed

Organic chicken stock at room tempt or homemade ready to go

Eggs scrambled 

Cooking Time

15 minutes

Yields

4-6 servings

Ingredients

10 cups homemade or organic chicken stock

3/4 whole wheat organic orzo

4 eggs lightly beaten

juice of 3 lemons

zest of 2 lemons

1 cup coarsely chopped cooked chicken

1 pound fresh organic spinach or organic kale

salt and pepper to taste


Directions

Bring the chicken stock to a boil

While stirring constantly drizzle in beaten egg mixture for 30-40 seconds or until cooked in threads

Add the lemon juice and zest

Add the chopped/shredded chicken

Add the spinach/or kale

Add orzo

return to a boil

check for tenderness or desired consistency of orzo

salt and peeper to taste

serve immediately or keep warm for all to enjoy at leisure
