Mini meatballs can be a mindfulness exercise
Do not overcook, just cook through and the soup will do the rest
Add spinach at the end or plate in a bowl and pour hot soup over to wilt gently
If adding orzo, I use organic whole wheat
For the meatballs I substitute Panko (Japanese-style bread crumb)
Easy substitute for spinach can be kale or escarole
My secret is keeping "Better than Bouillon" on hand. It is a wonderful way to deepen flavor
4 + servings
For the meatballs:
1.5 lbs ground turkey 99% lean
1/4 cup whole wheat bread crumbs or Panko
1/4 cup grated parmesan cheese
1 large egg
1/4 cup onion (if desired)
1 clove garlic minced
1/4 tsp salt
parsley to taste
For the soup:
10 cups of organic chicken broth (any amount is great and broth is wonderful for the soul) I find the orzo absorbs more than you think
I bag or container of organic washed spinach, escarole, or kale
1/2 cup organic whole wheat orzo
chopped carrots or pre-scliced slivers, my kids love the baby carrots and I dice up in a flash
Fresh crusty bread
1.) In a large stock pot heat the broth
2.) Heat the oven to 350/375 degrees
3.) Tackle the mini meatballs...its worth it! And a wonderful Meditative Exercise.
Combine ground turkey, breadcrumbs/Panko, egg, parsley, onion garlic salt and cheese in a bowl with your clean hands.
Then begin the Meditation. I take a large baking sheet and pull little dollops off the large bowl and drop them onto the tray. Then I take the free formed dollops and begin rolling them in my hands one by one. Repeat. It is quite satisfying. You can count or simply stay on task listening to music or get a family member involved. It creates memories. So this task has become a joy for me.
4.) Then place the tray in an oven and watch carefully. As only to cook through. The soup will do the rest. Or one can drop the uncooked meatballs directly into the soup!
5.) Add the carrots, orzo and only salt to taste. Broth tends to be heavy on sodium.
6.) If using raw meatballs cook through and if not wait until orzo is at the desired texture
7.) I then take my pre-washed fresh spinach and place a bunch in a bowl (this way for my picky eaters they can enjoy the soup sans green
8.) Ladle the delicious soup over the greens
