Kale "Frittata"

For quick and easy prep buy bagged organic chopped rinsed kale

One of my "go to's" is using Kraft salad dressing.  They have revamped their ingredients so it's "healthier"

Cooking Time

5 minutes

Yields

1 serving, double ingredients

Ingredients

2 organic free range eggs

1 cup of organic kale, chopped and washed, I used bagged & pre-chopped

Italian dressing or balsamic vinegar 

Directions

Oil a large sautéed pan, oven safe

Put heat on low

Also turn on your broiler, I use high setting 

Scramble 2 eggs and pour over the surface of hot pan

Tilt pan until entire surface area is covered 

Once "set" sprinkle kale over the top

Place in broiler for desired time.  I like my kale a little crispy

Watch carefully it cooks up quickly

Use an oven mit to grab the handle of the very hot pan and place on stove top

Now drizzle with dressing of your choice. You can just dot little sections or add to your liking

Below I sprinkled organic goat cheese on the top after the broiler. It was left over from dinner the night before

This is an open faced "frittata" but you can roll it up, fold it etc.
