Open Face Kale and Pepper Frittata

Great use for those left over roasted peppers

If needed clean and prep fresh organic peppers of any kind

Buy ahead organic washed & chopped kale

Cooking Time

5 minutes

Yields

1 serving

Ingredients

2 organic free range eggs

1 cup of organic chopped kale

1/2 cup of roasted organic peppers or fresh chopped organic peppers of your choice

Organic cooking spray or olive oil for greasing pan

Any organic veggies you like 

Directions

Turn broiler on high

Grease skillet pan with organic spray or organic olive oil place on stove top medium heat

Beat eggs in small bowl

Pour over greased skillet

Wait until eggs set about 2 minutes

Top with roasted veggies and kale

Turn stove top off

Transfer to broiler and watch carefully

Have an oven mit in your hand!!!!

When the kale turns a bright green or a bit crispy turn broiler off

Use oven mit to carefull remove skillet and place on stove top to slightly cool

You can drizzle salad dressing or balsamic vinegar ( the good kind) or season with salt and pepper to taste

Plate and enjoy 🌶🌱
