Use my recipe for "riced veggies"

Roasted peppers on hand

A substitute for the egg can be Dr. Praeger's Veggie Burgers

Fresh basil

Cooking Time

2-3 minutes

Yields

1 serving, double ingredients for 2

Ingredients

1 organic free range egg or veggie burger

riced veggies (my recipe)

roasted peppers

fresh herbs (I use basil here)

Directions

Easy Peasy one pan dish

Heat well oiled skillet on medium

Fry egg so that the white sets and yolk is to your liking

Spread the riced veggie mixture over your plate

If you were lucky to have roasted red peppers from the night before great! Place a few tablespoons onto your plate

Slide the fried egg off the skillet and onto the vegetables

Garnish with herbs, salt and pepper to taste
