Tribelli Mini Peppers 1 bag=5 Meals

Oh, these little “gems” just entered my life!  Where have they been hiding?  Apparently, in every supermarket in AmericaJ One of my favorite memories is roasting red bell peppers on the grill in the summer. We would fire them up blackened and fragrant and place in a paper bag to steam off the skin.  Then, while still hot pull the sweet ribbons apart and drizzle with olive oil and tons of fresh garlic.  If we truly wanted to be indulgent, then a crusty loaf of Italian bread was there for dipping and layering.  And sometimes a battle would ensue for the “heel” of the fluffy provision to stuff a perfect one hand nosh.

But what of the leftovers…if any?  I decided to get creative. So, we have the roasted peppers. Now what? Let’s try these recipes found on my website:

3.)   Peppers for breakfast? Yes, folded into an omelet. Or dolloped onto a frittata.

Plus, these colorful sweet veggies are loaded with nutrition and low in calorie. Most varieties are an excellent source of vitamins A and C, potassium, fiber and folic acid. Red peppers have almost 11 times more beta-carotene and 1.5 times more vitamin C than their green counterparts.  But that’s not to rule out these green goblins.  They can be stuffed, sautéed, and stir-fried.  And a traditional staple at any Boston Food stall when topped over a sausage and stuffed in a bun.  Hey Fenway park I’m talking to you! It’s Spring Training after-all.  As you can see they are quite versatile.  Eating them raw, roasted, tossed in main dishes to a delightful side on their own.

One work of caution: peppers can sting! Well, burn really.  So, keep your hands off your face especially your eyes.  We are exploring the sweet bell variety but any other will have you “crying” should you accidently touch your baby blues.  Some folks say this ingredient, Capsaicin, mainly found in hot peppers can help you lose weight and boost your metabolism.  But hey we are just looking for some nourishment and creative ideas.  So, check out my recipes page on Restore Body Balance and as always contact me with any questions.
